Funnel cakes!!!!!!




Ingredients:
1 egg 2/3 cup milk 2 tbsp. sugar 1 1/4 cup flour 1/4 tsp. salt 1 tsp. baking powder 1tsp vanilla extract About 1/2 cup of powdered sugar for dusting. Optional fruit and cinnamon.
Directions:
1. In a deep skillet, heat about two cups of oil over medium-high heat until hot. (start heating the oil before mixing the ingredients) Test the temperature by dropping a pinch of flour into the hot oil. If it sizzles right away without smoking, it's perfect.
2. Beat egg and milk. Mix all other ingredients in a separate bowl and slowly add to the egg mixture, beating until smooth.
3. Using a funnel, drop into hot oil working from center outwards in a web pattern. (You can use a gallon sized freezer bag instead of a funnel by pouring the batter into the bag, snipping off a small corner of it, and squeezing the batter into the oil.) If the mixture seems too thick just add some more milk.
4. Cook for about 2-3 minutes per side (or until golden brown) flip to the other side then, remove from the oil when golden brown and crispy. It is alot like a pancake........Pour cook flip cook remove. When you take it out place it on a plate that has paper towels on top. This will let the excess oil drain onto the towel and then you can dust the funnel cake. The time between taking the cake out of the pan and dusting it should be relatively short.
5. Sprinkle with powdered sugar and serve.
Twists: add some fruit(apple pie, blueberries, strawberries) for topping.(fresh, canned or pie filling) Add about a teaspoon of cinnamon to the batter before frying for a delicious additive.
By the way this is REALLY easy! The recipie makes about 5 or 6 cakes and they are delicious! Have fun and let me know if you tried it and how it went!
